Mini Veggie Frittata

  •  2 eggs
  •  1/4 cup milk
  •  4 cherry tomatoes – cut in halves
  •  1/2 cup spinach
  •  1/2  cup mushrooms – chopped
  •  1/2 cup cheddar cheese – shredded
  •  1/2 tsp salt
  •  1/2 tsp pepper
  •  olive oil cooking spray


  1. Preheat oven to 375° F. Coat a mini baking casserole with olive oil.
  2. In a medium bowl, mix together eggs and milk.
  3. Add tomatoes, spinach, mushrooms, cheese, salt and pepper.
  4. Fill mini casserole with the mixture.
  5.  Bake for 20 minutes.
  6. Enjoy!
