Chicken Lettuce Wraps

This recipe is a delicious and low carb meal to satisfy your hunger! It makes about 6 chicken lettuce wraps.


  • 2 heads iceberg lettuce
  • 1 lb. lean ground chicken
  • 6 tsp. olive oil
  • 2 tsp. fish sauce
  • Onion, chopped small
  • 1 scallion, chopped small
  • 1 clove garlic
  • 1/3 cup grated carrot
  • 1 cup chicken broth
  • 5 cup crushed tomatoes
  • Ground cumin
  • Salt and pepper to taste
  • Juice of ½ lime
  • 2-3 tsp. green Tabasco sauce


  1. Heat 3 teaspoons olive oil in a large non-stick frying pan. Add the ground chicken, and cook over medium heat for 5 minutes.
  2. Add 3 more teaspoons of oil and the fish sauce. Add the chopped onion, scallion, garlic and grated carrots and continue to cook until the ingredients are soft and starting to brown on the edges.
  3. Add the chicken broth, crushed tomatoes, ground cumin, and salt and pepper to taste. Cook over medium heat until the liquid has mostly evaporated, about 15 minutes.
  4. When there is only a small amount of liquid left, stir in the green Tabasco sauce and the lime juice, cook about 5 minutes longer.
  5. Prepare fresh leaves of lettuce and fill with the hot chicken mixture. Enjoy!
