Italian Stuffed Zucchini Boats


  • 1 clove garlic
  • ½ small bunch Italian parsley
  • ¾ lb lean ground beef or turkey
  • 2 oz grated mozzarella cheese
  • 1 1 (8 oz) can tomato sauce
  • ¼ lb mushrooms
  • ½ medium yellow sweet onion
  • 2 medium zucchini squash
  • dash black pepper
  • extra virgin olive oil
  • garlic salt


  1. Preheat Oven to 400 degrees F.
  2. Wash and cut Zucchini lengthwise and then hollow out the center to make room for filling
  3. Place Zucchini slices on a baking dish, rub with olive oil and season with garlic salt and pepper.
  4. Bake Zucchini for 15-20 minutes
  5. Dice Mushrooms and minced Garlic
  6. Saute Garlic and onion and mushrooms with olive oil
  7. Add beef or turkey and cook until brown
  8. Add tomato sauce, Italian Seasoning Garlic Salt and Pepper, cook until most of the water has evaporated
  9. Fill zucchini halves with beef mixture and top with cheese.
  10. place zucchini back in the oven for 5 minutes to melt the cheese
  11. Top with minced parsley and enjoy!
