Ingredients
- 1 clove garlic
- ½ small bunch Italian parsley
- ¾ lb lean ground beef or turkey
- 2 oz grated mozzarella cheese
- 1 1 (8 oz) can tomato sauce
- ¼ lb mushrooms
- ½ medium yellow sweet onion
- 2 medium zucchini squash
- dash black pepper
- extra virgin olive oil
- garlic salt
Instructions
- Preheat Oven to 400 degrees F.
- Wash and cut Zucchini lengthwise and then hollow out the center to make room for filling
- Place Zucchini slices on a baking dish, rub with olive oil and season with garlic salt and pepper.
- Bake Zucchini for 15-20 minutes
- Dice Mushrooms and minced Garlic
- Saute Garlic and onion and mushrooms with olive oil
- Add beef or turkey and cook until brown
- Add tomato sauce, Italian Seasoning Garlic Salt and Pepper, cook until most of the water has evaporated
- Fill zucchini halves with beef mixture and top with cheese.
- place zucchini back in the oven for 5 minutes to melt the cheese
- Top with minced parsley and enjoy!
