Enjoy corn? We’ve got a quick and easy recipe today called, “Jamie’s Sweet & Easy Corn on the Cob.” It takes only 15 minutes to make, serves a family of 6, and is just 94 calories. Corn is highly nutritious. It contains zeaxanthin and lutein which are some of the best antioxidants to consume. It’s also high in fiber. Avoid the sugar if you are trying to cut calories and stay a bit cleaner. However, the lemon juice is key and adds a flavor you don’t normally get out of corn. Try it now!
- 2 tablespoons white sugar
- 1 tablespoon of lemon juice
- 6 ears corn on the cob, husks and silk removed
- Fill a large pot about 3/4 full of water and bring to a boil. Stir in sugar and lemon juice, dissolving the sugar. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 10 minutes.
